Today i would like to share the recipe of spinach curry which i cook with the combination of potato and tomato.
This is a healthy and delicious recipe which we can enjoy in our daily life. Simple recipe , easy to cook and full of nutritions. This vegetable is rich in iron and calcium. Which we can enjoy for our lunch and dinner. We can enjoy it with chapati.
We can saute spinach with different combinations so that we do not get bored and also remain healthy.
Mostly i cook this vegetable with Tomato, but this time i add potato to give it a twist.

INGREDIENTS ✅
- Potato 1
- Tomato 1
- Spinach 1 bowl
- Green chilli 1
- Oil 1 tbsp
- Cumin seeds 1 tsp
- Mustered seeds 1/2 tsp
- Hing one pinch
- Salt to taste
- Turmeric powder 1-2 tsp
- Red chilli powder 1 tbsp
- Coriander powder 1.5 tbsp
- Dried mango powder 1 tsp
METHOD ✅
STEP 1 :
First take spinach, wash it properly by rinse water 3-4 times. Collect other ingredients to chopped.
This time i take one tomato, one potato and one chilli with spinach.
I chopped all vaggies like this.
STEP 2 :
Now take a deep fry pan or kadai , heat the oil in it.
When the oil get hot, add cumin seeds, mustard seeds and hing in it. When the seeds start to crackle add chopped potato cubes in it.
Now add salt and turmeric powder. Give it a mix.
Cook for 1 minute or till potato cooked 60-70%.
Step 3 :
Now add tomato, add red chilli powder , Coriander powder in it.
Mix well and cook for 1-2 minute.
Step 4 :
After it add chopped spinach in it. Also add mango powder and little water.
Cook for 2 minutes on the low flame. You recipe is ready to enjoy. Enjoy it with hot chapati.
