Lately I really like this cake. Something new, a collaboration of traditional cake with modern. I managed to create this recipe, of course from several recipes spread on social media. The name is, Black Glutinous Rice Cake with Melted Cheese.

Surely you only know that sponge cake is made from wheat flour? No. it turns out to be wrong. There is a cake that is similar to sponge cake but this can be an alternative if you avoid gluten. Its cake is really truly gluten free, but still uses dairy, although the melted cheese filling can actually be replaced with anything you want.

There is something difficult in making this cake, getting black glutinous rice ingredients. Seriously! This is really very difficult to get, the reason is because it is not very popular here. Black glutinous rice is usually only available on the island of Java. I got this flour by buying it from e-commerce. It was really difficult. Actually I could have ground the black glutinous rice with a blender, but I thought it would be very difficult to get a very fine flour texture because I used simple tools.

Ingredients of Black Glutinous Rice Cake with Melted Cheese:

  • 4 chicken eggs

  • 100 grams of black glutinous rice flour (alternative choice of white glutinous rice with charcoal)

  • 80 grams of sugar

  • 95 ml of canola oil

  • 1 tsp emulsifier (I use SP)

  • 1 tsp of double acting baking powder

  • Pinch of salt

  • 65 ml of thick coconut milk

  • 60 ml of sweetened condensed milk

  • 170 grams of spread cheese

How ​​to Make Black Glutinous Rice Cake with Melted Cheese:

  • I only use a blender, because I don't have a mixer that is comparable so I just use whatever tools I have. Eggs, SP and sugar are blended until they increase 3 times their original size. Until stiff and stiff, this is so that the texture of the cake becomes very moist.

  • Weigh the dry ingredients: black glutinous rice flour, baking powder and salt together. Then mix with the liquid ingredients. Stir until mixed. Then add oil and coconut milk, then stir until well blended.

  • Heat the steamer, then when it is hot, put the dough in the pan only reaching ½ the size of the pan. When it is done, steam for 15 minutes.

  • Prepare the melted cheese dough by mixing the cheese spread and sweetened condensed milk. Put it in a piping bag.

  • Then, pour it into the cheese spread pan, cover with the remaining dough. Continue steaming for 10 minutes.

  • When it is cold, the dough can be removed from the pan. And this is ready to be eaten with a glass of Americano!
