Named after the beauty of a city in Malaysia, Malacca = Melaka (Indonesia). A traditional Indonesian cake that is so sweet, sticky and chewy. If Japan has mochi, that's the description of this Malacca cake. made from chewy sticky rice flour, but, this Malacca cake has a sensational aroma from pandan leaf extract.
We know that pandan leaves have a distinctive aroma, beautiful and natural color. That's what makes Malacca cake very special. But, now Malacca cake has many colors depending on the addition of other ingredients. Many people add sweet potato to make it softer and also the color of other ingredients will have a big impact on the appearance.
But, this time I want to make an original Malacca cake. The touch of pandan leaves that always makes me miss my mother's cooking.
Malaka Pandan Cake Ingredients:

250 gr glutinous rice flour

50 ml coconut milk + 60 ml thick coconut milk

150 gr grated coconut

5 ml pandan paste

150 gr palm sugar

Pinch of salt

2 liters of water for boiling
How to Make Malaka Pandan:

Grated coconut, I steamed it for 10 minutes, then added a little sea salt. Stir until the salt is evenly distributed over the entire surface of the coconut. Set aside and store.
- The glutinous rice flour that I got from the traditional market was then weighed according to the measurements. I added a little salt and also pandan paste. Stirred and then added water little by little, not forgetting the liquid coconut milk in a sachet. But I suggest you use thick coconut milk from the original head, I don't have it at home so I just made a simple one.
- After that, stir slowly. In the bowl, there is already a mixture that is evenly mixed. Not too soft and not too stiff like most flours. Just like this, you can take a little and shape it.

I took palm sugar and smoothed it, to make it easier, you can cut it into cubes and put it in the sticky rice flour dough. Like this, shaping like a table tennis ball, a little smaller.

Heat a pan containing 2 liters of water, boil until boiling and then put the green balls into the boiling water. Wait until all float and lift. Drain from the water and pour into the coconut.
- Malacca cake is ready to be served with a glass of cold Americano.
