Mouth-Watering Vietnamese Sweet and Sour Pork Ribs!

I hope you’re all doing well and having a good, happy week so far. If you’re looking to try a new recipe that’s comforting, delicious, and easy to make, let me introduce you to one of my favorite home-style dishes: Vietnamese sweet and sour pork ribs.

There are many ways to prepare pork ribs, but today I’m sharing a version that’s both simple and deeply flavorful, the one I often make at home for my family. It’s savory, rich sweet and sour sauce, and absolutely perfect with white rice. Ready to cook? Let’s go!

Ingredients:

  • 400gr -500gr pork ribs
  • A bit of flour
  • Fish sauce, sugar, lime, black pepper, salt, chili sauce
  • Spring onion, shallot, garlic
  • Cooking oil

How to make it:

Step 1: Clean the ribs well. In a pot, boil water with a bit of salt and some shallots for a good smell. Add the ribs and parboil for about 5 minutes. This helps remove impurities and makes the meat more tender.

You can see some stuff come out when you boil the ribs. After boiling 5 mins, take them out, rinse them clean again and let it dry a bit.

Step 2: Coat the ribs lightly with flour. This will help lock in moisture and give the ribs a slightly crispy edge.

Heat a pan with a little cooking oil and fry the ribs until they’re golden on the outside. Don’t overcook, you just want a light, crispy coat to keep the meat juicy.

Step 3: This is an important step to make some magic sauce. Now let’s make the sweet and sour sauce that brings this dish to life. In a bowl, mix: 2 full spoons fish sauce, 1.5 spoons sugar, juice of half a lime, some black pepper, half a spoon of chili sauce(this is just to make color of the sauce more beautiful, I can’t eat too much spicy), half a bowl of water and you can adjust to your taste if you want more salty, chilly or more sweet, or more sour.

Step 4: In the same pan, sauté chopped garlic and shallots until fragrant. Pour in the sauce and bring it to a boil. Add the ribs, reduce the heat, and let it simmer for 15–20 minutes. This is for the sauce to thicken and the ribs to soak up the flavor and more tender. Before it finishes, toss in chopped spring onion.

Step 5: We are at the final step. The meat should be so tender as you can see the meat fall off the bone in my photo.

Look at the final result, mouth-watering, juicy, tender meat with thick sweet, sour sauce.
