Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Oats. When I read this week's challenge, I thought about preparing a dessert, but unfortunately I don't have an oven, only the microwave, however, I did a test without fruitful results, so I decided to use oatmeal to prepare a lunch for this Sunday.
I had been thinking for days about preparing some meatballs, so I used oatmeal for it. This would not go alone, I combined it with carrots, this mixture is perfect, I have used it before and this time I also got it right. For seasoning, I used the everyday spices that I always add in my preparations. They would have been vegan meatballs, but it was necessary to use an egg to give consistency to the mixture. I made this recipe with ingredients I already had at home, I have oat flakes, which I processed into flour to achieve the goal: oatmeal meatballs.
Ingredients
- 2 cups oat flour
- 1 carrot of 59 grs
- 54 grams of assorted seasonings (white onion, red bell pepper and chives)
- 1 egg
- 1 clove garlic
- 1 teaspoon curry
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon ground onion
- 2 tablespoons bread crumbs
- Pepper to taste
- Salt to taste
- 3 tablespoons oil
Preparation
1.-. Wash and remove the skin of the carrot, then grate it on the fine side of the grater. Also cut the garlic clove into very small pieces.
2.- We add the oat flour in the bowl where we have placed the grated carrot and the chopped garlic. We also add the spices (curry, ground onion, paprika, cumin and pepper to taste).
3.- Mix the dry ingredients well, then add salt to taste and mix again. To add consistency and to be able to assemble the meatballs, we add the egg. We mix well until we obtain a homogeneous dough and then we assemble the meatballs. To prevent the dough from sticking to our hands, we impregnate them with a little bit of oil, this will make the process easie.
4.- Bread the meatballs, cover them with the bread crumbs on all sides. Then, in a frying pan with three tablespoons of oil, fry them until golden brown. Once ready, let them rest for a couple of minutes on absorbent paper.
The oatmeal meatballs are ready, they can be eaten alone, but I accompanied them with short pasta. What would you serve them with?.
