Hello Foodies ๐
Hope everyone is doing great.
In this blog I'm going to share a unique way to prepare eggplant. In different parts of Indian a same recipe is prepare in different and unique way specially in Himachal. As it's colder then other areas the food prepared here is made in such a way that it's does provide body heat as well as don't lead to issues like acidity.
It's actually a South Indian dish but it is also prepared in different parts of North India specially in Himachal, Punjab and Haryana. The eggplant is roasted and mashed in this recipe and it taste delicious. I think nobody likes eggplant in general but when you prepared its bharta it tastes totally different.
Here's how I prepared it:
Ingredients
1/2 Kg Eggplant
1 Spoon Red Chilly Powder
1 Spoon Coriander Power
1 Spoon Cumin Powder
1 Spoon Turmeric
3 Onions
2 Tomatoes
Oil
You wull be able to prepare meal for 2 from the Ingredients and quantity mentioned about. Also it takes 25 minutes to prepare it.
Procedure
Take 2 onions, 2 tomatoes and some chillies and chop them fine. You can even grind the tomatoes if you want, it will enhance the taste.
Now take some eggplant and wash them properly. Divide them into two or more parts and then add them in pressure cooker.
Add 2 glasses of water and some salt in it and cover the cooking with its lid. Keep the flame high at first and after 2 vissel lower ther flame and let it heat on steam.
It will take approx 20 minutes to cook the eggplant properly. Till them let's prepare the 'tadka'. It's common in every Indian dish you prepare specially in North India.
Here are some chopped tomatoes that I'll use in tadka.
Take out a kadai and put it over the gas on low flame. Let it heat first and then add some oil in it. After 2 minutes add the chopped onions in it and let them cook until they turn brown.
Now it's time to add some spices in it that i have mentioned above. It includes Turmeric powder, coriander powder, cumin powder and salt. You can skip red chilli powder if you want. I personally don't think they are good for health that's why I never use them. Also they don't enhances the taste.
Now add chopped tomatoes in it and some salt so that they cook properly. Add some water in it and mix it well.
I have aslo added besan in it you can skip if you want. But it thickens the paste and add a better flavor to it.
Here's how it looked after adding besan. Until now our eggplants in cooker are also ready and have a look at them.
Separate the water and put them in plate to let them cool.
Now we have to separate the outer layer of the eggplant like I did and shown in the picture. Mash the eggplant and it into the kadai.
This is how it's going to look and now we have to cook ot for 5 more minutes. To enhancethe taste qe have to add some finely chopped onions in it.
Mix it well and cook for 5 more minutes and your delicious began ka bharta is ready.
I had it with chapati and salad. With chawal and daal it also taste marvelous.
Here are some pictures of me with the food I have prepare. I have taken all these pictures with my Sony ZVE-10 camera and i have taken my own pictures with my one plus 7 phone.
I hope you learned something new and do give it a try and let me know how it turned out.
