In this blog I'm going to share a unique way to prepare eggplant. In different parts of Indian a same recipe is prepare in different and unique way specially in Himachal. As it's colder then other areas the food prepared here is made in such a way that it's does provide body heat as well as don't lead to issues like acidity.

It's actually a South Indian dish but it is also prepared in different parts of North India specially in Himachal, Punjab and Haryana. The eggplant is roasted and mashed in this recipe and it taste delicious. I think nobody likes eggplant in general but when you prepared its bharta it tastes totally different.

It will take approx 20 minutes to cook the eggplant properly. Till them let's prepare the 'tadka'. It's common in every Indian dish you prepare specially in North India.

IMG-20250527-WA0004.jpg

Here are some chopped tomatoes that I'll use in tadka.

IMG-20250527-WA0012.jpg

Take out a kadai and put it over the gas on low flame. Let it heat first and then add some oil in it. After 2 minutes add the chopped onions in it and let them cook until they turn brown.

Now it's time to add some spices in it that i have mentioned above. It includes Turmeric powder, coriander powder, cumin powder and salt. You can skip red chilli powder if you want. I personally don't think they are good for health that's why I never use them. Also they don't enhances the taste.

Now add chopped tomatoes in it and some salt so that they cook properly. Add some water in it and mix it well.

I have aslo added besan in it you can skip if you want. But it thickens the paste and add a better flavor to it.

IMG-20250527-WA0013.jpg

Here's how it looked after adding besan. Until now our eggplants in cooker are also ready and have a look at them.

IMG-20250527-WA0026.jpg

Separate the water and put them in plate to let them cool.

IMG-20250527-WA0028.jpg

Now we have to separate the outer layer of the eggplant like I did and shown in the picture. Mash the eggplant and it into the kadai.
