Hello hivers of hive food community! This is actually my first post here and I just discovered this community two days ago. Today I'm going to share to you a local food of ours here in the Philippines.
These are stalks of sweet potatoes. Common stalks are purple or violet, there are also green and mixture of purple and green. I choose to have purple leaves because it's boiled soup is very helpful to our blood.
I just remove it from the stalks. I only use the leaves. The stalks can be planted and it only takes one month to grow more leaves.
Then I put a lot of water on the pan. I let it boil before I put the leaves. It's better for it to boil so cooking will be fast and the leaves won't be slimy. Before I put it on a boiling water I washed it thoroughly because sometimes there are spiders or worms on the leaves so better to soak it in a water first.

When the leaves decrease so much in size then it's ready to turn off the heat and remove it from the water. In this case you can achieve a crispy leaves not a slimy one.
For me it's better to eat it while hot. So I have to put little by little amount of it into the mixture, some would like to have it cold so some would put it in the refrigerator before they eat. Also you can dip the leaves on the mixture. But in my case I prefer it to be mixed well.
The boiled water of the leaves will turn purple. I always drink this one. I will put it in a glass then make it cold. Sometimes I put ice or lemon. This will boost the number for the red blood cells to prevent anemia.
And today I had mangoes, so I added mangoes to the mixture this could help ease the saltiness of the mixture.
