Another week of the Qurator's: Hive Top Chef! | Carrots, I love carrots, there should always be carrots in my fridge haha, I've submitted several recipes that we can make with this very special vegetable, arepas, juices, and my favorite, carrot cake, which is the recipe I'm going to share with you today, as my entry to this contest. This time I added something different, a little Chantilly cream to decorate, which gave it a phenomenal touch. Normally, a frosting made with cream cheese is added, but I assure you that the combination of cream and cake is wonderful. Let's start with the step-by-step instructions.
Delicious Carrot Cake with Chantilly Cream
Ingredients:

1 3/4 cups all-purpose flour.

3 eggs.

1 cup sugar. I used a little less; if you have brown sugar, it's ideal for this cake.

90 ml sunflower oil or whatever oil you have at home.

4 small carrots. The secret is to add a lot of carrot.

50 g butter.
-
1 teaspoon vanilla.

1/2 cup raisins. Nuts can also be used, but I didn't have any at home this time.

1 1/2 teaspoons baking powder.

1 tablespoon ground cinnamon.

A pinch of salt.
Preparation:
1- Wash the carrots well, remove the skin, and grate them using the coarse side of a grater. Set aside.
2- In a bowl, add sugar, oil, and semi-melted butter and mix with a hand mixer. You can also use an electric mixer.
3- Next, add the eggs and vanilla, continuing to mix until smooth.
4- Add the grated carrot and raisins. Mix everything well, then add the flour, mixed with the baking powder, salt, and cinnamon, previously sifted. Mix everything with folding movements until you have a smooth dough.
5- Finally, add the dough to a greased and floured baking dish and bake for approximately 40 minutes, or until golden brown.
6- Once the time has passed, remove from the oven, unmold, let it cool, and decorate with Chantilly cream. You can decorate this cake with any topping you like. You can also sprinkle a little powdered sugar on top, and it will be just as delicious. Then enjoy this wonderful carrot dessert.
