I am trying to get a bit more active on YouTube and have started sharing gameplay videos of Need for Speed Most Wanted (2005), but with mods. These mods not only give it better visuals but also change the way you play. I'm using a modded version that increases the difficulty of the original game and makes the pursuits even more intense.
You can change the heat level, and they go up to heat level 15. I've also given these cops 3x acceleration, so they are insanely quick, and getting away from them takes a lot of effort. Most of the time, they are pushing me from behind to take me out of tight situations.
Mods I used
There are a couple of mods that make it much more fun. One of them is:
which allows you to alter the number of cops, opponents, etc.

This one adds a lot of things to the game, from the ability to change the heat level on the fly to weather settings and visual tweaks.
But I am using an edition that has both of these mods and a few more. They have also made additional changes to the gameplay that make it quite harder than the base game. You can find the link to download this edition .

This Modern edition of the game adds a lot of new cars and gameplay changes. I was in one of the police cars, lol.
It was heat level 15, which means all the cars were heavy SUV units, and these weren't normal units either. All of them were modern, and they take a lot of beating before getting destroyed.
The day/night cycle makes it even more interesting. My only complaint is that at night, it looks a bit too underexposed. And that big, bright sun can easily blind you, lol.
Talking about the pursuit, it started with Heat level 15 with a total of 85 cops as backup. And they call for more if the number gets lower than 15 (or was it 25?). This means they are constantly behind your tail, spawning roadblocks at almost every turn. I had to reduce the chance of spawning spikes to very low if I wanted to stay for a while. They still spawn, but with significantly lower chances. I could have reduced the chance of spawning roadblocks, but that would mean less chaos and fun.
I love to watch these cops smash their own cars with little to no regret. Spending all of their budget on catching a racer and caring nothing about their lives is no joke. They are taking their job too seriously in Rockport.
They just boxed me towards the end. One of the cops was above my car, two of them on my side, both pushing me in opposite directions. And with three times the normal acceleration, it was hard to get away with that. I shouldn't have gone for that gas pump. It was my bad to start with.
But that's alright, you know why? Because they charged me only $6,525. For all the 21 cars that got totalled and another 50 or so which got damaged, plus the hundreds of traffic cars, so much property damage, and they charged me just that? Now tell me, with a fine like this, why would I not do it again? LOL
Oh, and I have about a billion dollars in cash. You've got to love these mods.
