An Easy-to-Prepare Dish for Lunch: Something with Soup, Wheat Flour Vermicelli, and Something the Oldies Will Enjoy

Today is just "that" day, where cooking become an alien word to me. I'm too lazy to make anything but at the same time, I don't want to eat without any dish to pair with my rice. Should I just go with fried egg again? Ah, I should make a scrambled egg this time to make it different. But then, they will just taste the same. But now, actually, I like the texture of a scramble egg than the a boiled one. I also like that I can season it however I want. There are times I only put salt and MSG in my scrambled egg. But there are times too that I want it to be more yummier by mixing garlic, onions, pepper, salt, msg and tomatoes. This is the best version of scrambled egg for me. How about for you?

But cooking really is like a hard quest (⁠╥⁠﹏⁠╥⁠)

Even the oldies had a hard time thinking what to make for today's lunch.

Then Mommy D suggested something easy to make dish, soupy and with egg. Yeah, egg, again! Lol. Aside from canned goods, that's the only foods available in the store.

So here's the ingredients for today's lunch. I already shared this before actually but without detailed process on how I made it. So this time, i'll be sharing the step by step process, it's really just easy and it won't even take an hour.

Ingredients:

  • leftover chicken,
  • half of chicken cubes,
  • onions,
  • pepper and salt,
  • wheat flour vermicelli,
  • 3 eggs.
  • 2 cups of water
  • cooking oil

First things first, heat the pan, put oil and sautee onions with the leftover chicken.

Next, after sauteeing the two, put the two cup of water, season it with salt and pepper and let it boil once done put the chicken cubes.

Follow it with the three eggs. And we're not gonna scrambled the egg. We'll put it as a whole like a boiled egg without it's shell. Still different no? Lol

Before mixing the other ingredients, I remove first the egg for it not to be overcooked

After removing the eggs, I mix in the Malunggay. This green leafy vegetable will make this this healthier. And I put a lot because we all need it.

After boiling it for 30 seconds, I added next the wheat flour vermicelli. And let it boil until the noodles soften. I want mine a little softer though. How about you? Chewy or softer?

And done! Look at all those greens. Yum! Yum! I put back the egg in there by the way. Ehe

Serve while it's hot!

I'm thinking about anything fried food to pair with this. Seriously, I wish we have Tinapa or dried fish. This will really taste better with it. I just thought about it ehehe ♪⁠ ⁠\⁠(⁠^⁠ω⁠^⁠\⁠ ⁠)

And so, we finish lunch with this as a dish for the day. I enjoyed the soup a lot. And really, a meal with vegetables is the best! Do you agree?

Now, i'm thinking what we'll be having tomorrow for lunch. I only have to think about lunch because when we make a dish, it is always until for dinner meal too. Hahhh, I should think about it tomorrow. Wish we'll have something different tomorrow.
