This cheese bread has a signature chewy texture that is a little bit lighter than regular bread. This is my take on Pão de Queijo – Brazilian Cheese Bread!
It is easy with only 6 ingredients and a blender!
Preheat the oven to 400 degrees Fahrenheit. Grease your muffin pan with butter or cooking spray. I used a square pan (with a divider which you will see later).
Put one whole egg in a blender.
1/4 cup Olive oil (or Avocado oil, which is better).
2/3 cup of Milk.
1 1/2 cups Tapioca Flour.
1/2 cup grated Cheddar Cheese
1/2 teaspoon of Salt.
Pulse until completely mixed and combined. Scrape the sides of the blender to get all ingredients down as needed.
Pour the batter into muffin pans, then bake at 400 degrees F for 20 minutes.
Fill the muffin pans only halfway, as the bread will rise! Like I said earlier, I used a square pan with removable dividers.
I took off the dividers in the last minutes of baking.
The Cheese Bread is done!
Cool for 2 to 3 minutes before removing from the pan
and then serve immediately!
